Easy keto greek salad

NOW lets get into this recipe.


Things you’ll need :


The Salad :

  • Cherry tomatoes

  • 1 Red Onion (Optional)

  • Chicken meatballs (mines was homemade, give me feedback to get the recipe!)

  • Romaine lettuce (chopped or any kind of lettuce, kale, spinach etc)

  • 1 Avocado

  • Couscous (any type, I used pearl couscous or RiceSelect Couscous, Near east couscous mix)

  • Feta cheese (any amount to your liking)

  • 1/2 tablespoon Shredded mozzarella cheese

  • Black pepper (optional)

The dressing :

  • Garlic paste

  • Olive oil

  • 1/2 of water

  • 1 Tablespoon of Kraft Sweet Honey Catalina Salad Dressing or any sweet dressing (optional)

  • Black pepper ( Any amount / 1/2 of black pepper)

  • 1/2 of salt

Instructions :

Dry ingredients :

First wash your lettuce and dry them after 10 minutes or less (optional), next after the lettuce is clean, or skip this (if you don’t care) Chop up your lettuce, Red onion and cherry tomatoes, your avocado.

Couscous instructions



Set your dry ingredients to the side and begin to cook your couscous

THIS IS IMPORTANT! make sure that your couscous is cooled down or warm otherwise your lettuce and all of the ingredients will get soggy. ( skip this step if this doesn’t matter)

Depending on your couscous there’s many various ways of cooking couscous, but if you used the kind that I have in this recipe, you can follow the steps I took to cook it.

  • To your pot, Add about 1/4 or more of water, Oil/butter and 1/2 of salt to your pot

  • set your pot on the stove on low heat and wait for the water to boil.

  • After the water is boiling, proceed to add in your couscous.

  • STIR, STIR..

  • cover your pot with the lid and remove the couscous from the pot and allow it to cool off for 5 minutes.

  • After the 5 minutes, Fluff your couscous and boom your done! Let your couscous cool down before mixing in with other ingredients.

Combining all of the ingredients

Now start with all the dry ingredients, onion, tomatoes, lettuce, avocado, Feta cheese, mozzerella etc.. to your bowl Then take your couscous add that on top and then add in your dressing including the chicken meatballs. (WHICH IS PERFECT PLACED TOGETHER) or protein or this salad can be eaten alone. and you then have your easy keto greek salad with chicken meatballs.
